Lisa Goodwin-Allen joins The Game Bird

Chef Lisa Goodwin-Allen will oversee The Stafford London’s restaurant The Game Bird, starting this month, working collaboratively with the hotel’s executive chef Jozef Rogulski.  

The new menu will showcase British produce and support many British artisan producers, drawing on Goodwin-Allen's experience from Michelin-starred Northcote in Lancashire.

Goodwin-Allen will continue her role as executive chef at Northcote, another property within the Stafford Collection.

“Culinary director Ben Tish and I are delighted to be welcoming Lisa to The Game Bird," says Stuart Procter, chief operating officer of the Stafford Collection. "She creates incredible dishes at Northcote and her food ethos fits perfectly with The Stafford London.” 

From 14 September, guests at The Game Bird will begin their dining experience with a selection of H. Forman & Son smoked salmon, served tableside from the restaurant’s bespoke trolley.

Starters on the new menu will include gala 'pie' with pressed pork, beer onions and brown sauce; and Lancashire three beets with frozen Dorset Ash goat’s cheese and roasted hazelnuts.  

To follow, main courses will include Dover sole, potted Southport shrimps and sea herbs; Jacobs Cross lamb, sticky belly, wood-roasted leek and sheep’s curd; butter-poached native lobster, house-dried tomatoes, basil and Champagne; and squash potato dumplings, Black Cow Cheddar, pumpkin seed granola and crispy sage.

A handful of The Game Bird’s most popular main dishes will also remain on the menu, including the chicken Kiev; Scottish venison Wellington; The Game Bird – roast squab pigeon with buttered turnips, apple, bacon barley risotto; and steak and ale suet pudding.

A new seasonal cocktail list will be served from the Champagne bar in the restaurant.
