NoMad London welcomes new executive chef
NoMad London, the hotel located in the storied Grade II-listed building in the heart of Covent Garden, has appointed Michael Yates to the role of executive chef.
Equipped with experience in some of Europe's most celebrated Michelin-starred kitchens, chef Yates will now oversee the hotel's signature restaurant, the Mexican-inspired Side Hustle, as well as the Library and the newly opened cocktail bar, Common Decency.
Bringing his minimalist style to the hotel’s culinary offering, Yates will showcase local provenance and highlight single ingredients. His first menu will launch on 26 April, with his Sunday lunch offering launching later in the month.
"My cooking style is timeless – it’s minimal, eclectic and locally focused, all of which resonate with the NoMad brand and team," says Yates. "The lifestyle here is a perfect fit for my culinary ethos and my style. We develop our dishes with integrity and a passion for simple yet vibrant components – whether it’s fresh morels, Shetland Scallops or English asparagus."
Originally from Lancashire, Yates discovered a passion for cooking when he was 16. Since then, his skill has seen him through positions at the three-Michelin-starred kitchen Oud Sluis, a former culinary destination in the Netherlands. From there, Yates travelled to the luxury resort, Qualia on Hamilton Island, Australia.
Yates opened his own restaurant, Sail and Anchor, in Antwerp with his partner in 2016. The pair ran the intimate restaurant for seven years before recently making the decision to close so Yates could take the next step in his career with NoMad London.
