Parry to bring Brat and Mountain to West Wales

This September, Michelin-recognised Welsh chef Tomos Parry will relocate his three London restaurants, Brat, Mountain and Brat x Climpson’s Arch, to the West Wales coast for an exclusive weekend at Fforest in Cardigan.

From 19 to 22 September, Parry and his team will craft a series of menus inspired by the land’s unique character, incorporating local produce to create one-off dishes that reflect the Welsh landscape.

A culinary retreat

Throughout the weekend, more than 30 members of Parry’s team – including chefs, bakers and sommeliers – will journey from London to Wales to be a part of the occasion. The menu will celebrate the very best of the season, cooked via Parry’s signature fire-led approach and shaped by local ingredients. 

Born in Anglesey, Parry's Welsh heritage shapes his approach to food, with each of his restaurants paying homage to the ingredients, traditions and landscape of Wales. Fforest, the rural retreat founded by husband-and-wife duo James Lynch and Sian Tucker, is set within 500 acres of the Welsh countryside. Through this collaboration, Parry and Fforest will come together to explore the flora and fauna of West Wales in a celebration of place and plate.

The weekend will be enhanced by talented artists, designers and makers, who will curate a programme of events and workshops. For one evening, Parry will also be joined by a special guest chef, bringing their own perspective and creativity to the weekend’s culinary journey.

“Returning to cook in West Wales, surrounded by the landscapes and ingredients that first inspired me, feels incredibly special," says Parry. "I’ve admired the team at fforest for so long and we’ve connected over our deep respect for the land, sea and bringing people together to enjoy a really meaningful experience.”
