Cheltenham set to welcome American-Mexican smokehouse
A new smokehouse restaurant and taproom is opening in Cheltenham this autumn, focusing on locally sourced meats, independent brews and live-fire cooking.
Coalhouse – Brew & Que, founded by chef-restaurateur Lewis Spencer and co-owned by Jay Rahman of JM Socials, will open its doors for a soft launch in the former Mayflower site on 17 October. It will also host an invite-only launch party on 16 October, bringing together family, friends and a wider network to preview the venue.
Dining at Coalhouse
The concept is inspired by Spencer's travels to the US and Mexico, where he developed a passion for barbecue cuisine. Having worked with American chefs to refine his approach, the Coalhouse kitchen will incorporate flavours and dishes from both cultures.
Diners can expect smoker-led dishes including 18-hour smoked brisket, St Louis pork ribs, stacked burgers, cedar-plank salmon and miso aubergine.
"Barbecuing as a craft has always been about getting together to share and create memories around food," says Spencer. "At Coalhouse, we've built the restaurant with that spirit at its heart, incorporating live-fire cooking, smoky flavours and dishes that are meant to be enjoyed together."
The drinks list will champion the region's artisanal brews and ciders, featuring two exclusive white-label brews created with Harbour Brewery, alongside a selection of guest taps and local favourites. Guests will also be able to retreat upstairs to the speakeasy-style bar, 18th A, for cocktails and bar snacks.
