Evolv to take Chop House & Tavern to NYC

Following the successful September launch of Liverpool Street Chop House & Tavern, The Evolv Collection has announced the expansion of its Tavern concept, taking the brand to New York.

Queens Tavern is set to open in New York's Hudson Yards early 2026, while Paternoster Tavern in London's St Paul's is scheduled to open this month.

The new Tavern openings represent a strategic extension of The Evolv Collection's Chop House & Tavern brand, which focuses drinking and dining destinations that complement the full-service Chop House restaurants.

"The Tavern concept is the natural evolution of our brand vision," says Martin Williams, CEO of The Evolv Collection (pictured). "Following the tremendous reception to Liverpool Street, we're expanding the more casual, pub-style tavern experience to sit alongside our Chop Houses.

"These are destinations for gathering, whether for a quick £5-pint, cost price caviar or Welsh Rarebit after work or an evening of celebration with friends."

Bringing the concept to New York

Queens Tavern will launch in early 2026 at 20 Hudson Yards, becoming Evolv's third NYC venue and marking The Evolv Collection's expansion of the Tavern concept to New York. 

The Tavern concept has been designed as the more accessible, spirited companion to the Chop House restaurants.

"Think of the Taverns as the little brothers of our Chop Houses," adds Williams. "They capture the same spirit of conviviality and heritage, but with a lighter touch, perfect for a pint and a bite, or an evening that might turn into something more."
