Anthony Demetre adds The Hive to Wild Honey
Chef Anthony Demetre has opened The Hive by Wild Honey within Sofitel London St James.
The chef says that the new opening marks the next evolution in his Michelin-starred restaurant Wild Honey St James.
The Hive by Wild Honey makes use of honey harvested from the hotel’s rooftop beehives, incorporating this throughout the menu.
Dishes include Isle of Orkney hand-dived scallop with white vermouth, XO sauce and sea herb salad; Scottish hare ‘Royale’; grilled rare breed sirloin of beef with crisp potatoes, salsify and bordelaise sauce; and Lancashire cheese ‘farinette’ with heritage beetroot, crab apple and preserved pine cone.
“The Hive by Wild Honey represents many of the things I love about hospitality; warmth, generosity and a connection to nature," says Demetre. "I wanted to create a space that has the spirit of Wild Honey St James but with its own identity and on a more personal level.”
Success by design
Echoing Demetre's love of food, culture and art, The Hive by Wild Honey has been brought to life by designer Jim Hamilton.
The space is anchored by a central table topped with hexagonal motifs that reference the building's former history as the headquarters of Lloyds Bank, whose original 1765 emblem featured a beehive.
A curated mix of artwork adorns the walls, including a bespoke piece by artist Eleanor Carlingford, while books line the shelves for guests to peruse throughout dinner. A small lounge offers an area for a drink or two before dinner.
