WatchHouse founder backs new pizza project
Roland Horne, the founder of coffee shop brand WatchHouse, has partnered with Legare's Jay Patel (pictured right) and former Dusty Knuckle baker Jack Ellingham (left) on a new pizzeria project.
Five Feet will open in the former Dobson’s Bakery site on London's Bermondsey Street in September, not far from Patel's Legare restaurant and Luna wine bar.
The new pizzeria's pan pizzas will feature an airy, centimetre-thick dough, unique to the site. Made from a blend of heritage grains milled on site using a bespoke stone mill, the dough will be topped with British ingredients from independent producers and baked in seasoned black iron pans.
Open in the evenings from Tuesday to Saturday, Five Feet will be a 55-cover restaurant. This name honours the area's industrial roots and Five Foot Lane, known today as Tanner Street.
What pizzas can we expect?
Ahead of the opening, here are some of the pizzas on the menu...
- Hot Sausage Pie: Vodka Sauce, Fennel Sausage, Pecorino, Ricotta, House Pickled Chillies, Calabrian Chilli Honey
- Pepperoni Pie: Tomato Sauce, For Di Latte, Pecorino, Pepperoni, Parmesan
- White Potato Pie : White Sauce, Potatoes, Green Onions, Caramelised Onions, Fior Di Latte, Scamorza, Aged Cheddar
- Vegan pizzas will also be available, made with specialist vegan cheese.
The pizzas are joined by a selection of crust dippers (Blue Cheese, Garlic Butter, Ranch, Spicy Mayo, Herb) as well as menu of comfort dishes such as Polenta Fritta served with vodka sauce and scamorza cheese; Wings with a choice of buffalo & blue cheese or garlic butter and parm; and Focaccia di Recco - a flatbread filled with creamy stracchino cheese.
Seasonal gelato will complete the meal alongside more decadent desserts like Double Chocolate Cake made using Pump Street chocolate from Suffolk; and Bomboioni - a cinnamon crunch doughnut served with milk gelato made from Jersey dairy.
A drinks list will revolve around low-intervention wines offered by the glass, carafe and bottle with regions ranging from East Sussex to Campania, as well as vermouths, digestivi and organic Sabadi sodas from the southernmost tip of Italy.
