Chef Jolly to open site in Brockenhurst hotel
Surjan Singh, often known as Chef Jolly, has announced a new restaurant within Careys Manor Hotel & SenSpa in Brockenhurst, New Forest.
'Kasi' will launch in late October, bringing a new contemporary Indian restaurant from the renowned chef and TV personality to Hampshire
In what is Singh's first UK restaurant outside London, Kasi follows the success of The Great Indian in Finsbury Park and Chef Jolly’s Indian dining projects across the globe including Singapore, Kolkata, Doha, Maldives and luxury Cunard cruise liner The Queen Anne.
Kasi, the ancient name for Varanasi, one of the world’s oldest living cities, draws inspiration from the cultures and cuisines found along the Ganges, from the Himalayas to the Bay of Bengal.
"The food at Kasi will tell the story of the Ganges through the ingredients, flavours and cooking traditions found along its banks," says the chef. "At the same time, it will be firmly connected to its home in the New Forest, making the most of the exceptional produce available locally and across the British Isles."
What's on the menu?
The menu combines spices, open-fire cooking and time-honoured techniques with locally sourced British produce and seasonal ingredients, with many dishes bringing an element of theatre and discovery inspired by the rituals and celebrations of the regions.
The 4,349 sq ft venue will accommodate 85 covers, with additional seating on an outdoor terrace.
Alongside an à la carte menu, Kasi will offer a traditional thali lunch menu as well as three- and five-course tasting menus, with optional wine and cocktail pairings. Signature dishes will include Hampshire lamb parantha; banana leaf roasted Rivers Test & Itchen trout with coriander-garlic curry leaf butter; roasted Wessex saddleback pork belly with buttered pao buns; and paneer lotus kofta with sundried mint and fennel. These will sit alongside traditional tandoori dishes, biryanis, lentils and breads.
"Kasi represents an exciting new chapter for Careys Manor," adds Steve Woodrow, Careys Manor Hotel & SenSpa general manager. "Chef Jolly's vision and reputation for exceptional Indian cuisine make him the ideal partner as we continue to evolve our dining offering. Kasi will bring a distinctive new experience to both our hotel guests and the local community, further establishing Careys Manor as a destination for outstanding food, as well as exceptional hospitality."
Kasi will be one of three restaurants at Careys Manor Hotel & SenSpa, joining British restaurant Cambium and Thai restaurant Zen Garden.
