Neighbourhood wine bar concept opens at Trivet
A two Michelin-starred restaurant in London's Bermondsey has introduced its own dedicated Monday evening wine bar.
Labombe Wine Bar at Trivet serves an exclusive by-the-glass wine offering from sommelier Isa Bal, as well as a blackboard menu of relaxed yet elevated bar bites from chef Jonny Lake.
The Labombe experience
The concept is inspired by the fictional bistro created by Lake, former head chef at The Fat Duck, for a school French project, on which the teacher commented, "Où sont less boissons?", meaning "Where are the drinks?". Lake decided to reimagine Labombe as a wine bar at Trivet, accompanied by an extensive drinks list created by Bal, an award-winning sommelier.
While the main restaurant remains closed on Mondays, the bar will offer a 450-strong wine list, with Bal choosing bottles to pour by the glass exclusively that night. This gives wine enthusiasts a chance to try a curated selection of unique and rare varieties without having to purchase full bottles.
Guests can also sample Lake's menu of small and large plates. Snacks include focaccia with salume rosa and farinata with onion and rosemary, along with homemade French fries with onion ketchup.
Seasonal small plates include green asparagus with anchovy cream and scallop roe and the hot tongue bun – a dish from the restaurant's lunch menu comprising braised Angus x wagyu ox tongue dressed with anchovy mayo, pickles and blackcurrant mostarda. Larger plates include costoletta alla Milanese, and Italian breaded veal cutlet served on the bone with white cabbage and salsa agrodolce.
For dessert, diners can choose from tiramisu and butter tarts, among other options.
The duo launched in Trivet in 2019, with the venue earning its first Michelin star in 2022 and its second this year. Its name derives from the cooking utensil – an iron tripod used in global cooking cultures – and reflects the relationship between the kitchen, cellar and bar.
Alongside the 20-seat standalone bar, the restaurant has a 45-cover dining room and an outdoor terrace seating 25 guests. The Mustard Room, Trivet's private dining space, accommodates up to 35 seated covers.
