KOL founder introduces new concept
The founder of Mexican restaurant KOL is introducing a new concept to his estate, with Fonda set to open its doors on Thursday, 3 October.
Inspired by the traditional Mexican fonda – a family-owned Mexican eatery – the restaurant will showcase Mexican regional classics with a focus on quality ingredients and creative preparation through the unique lens of chef-patron Santiago Lastra.
The restaurant's design will reflect the warmth of rural Mexico and the vibrant colours of its urban landscapes. It is inspired by Yucatán's old haciendas, Guanajuato's textiles and Mexico City's emerging design scene. Central to Fonda's kitchen is the comal, a traditional clay griddle, while the cocktail list is anchored by agave, featuring a dedicated Paloma section and reimagined classics.
