New head chef joins The Three Chimneys

The Three Chimneys on the Isle of Skye has appointed a new head chef to lead its kitchen, continuing its 40-year fine-dining culinary legacy.

The restaurant with rooms has added Paul Green to its team following a UK-wide search for the most suitable recruit. Green has over 20 years of international experience under the mentorship of acclaimed chefs including Simon Rogan, Michael Smith, Martin Wishart and Adam Reid. 

Green has worked in respected restaurants across the UK, Europe and New York. He recently served as head chef at the Driftwood Hotel in Cornwall, before which he was stationed at the five-red-starred Torridon Hotel in the Scottish Highlands.

The chef is now returning to The Three Chimneys, having started his career there as commis chef under Michael Smith in 2005. On top of The Three Chimneys at Colbost, he will also manage the kitchen team at The Three Chimneys at Talisker, which was launched at Skye's oldest distillery last spring. 

"The Three Chimneys is where my passion for Scottish produce really ignited," says Green. "Coming back to the island almost 20 years later as head chef has an even greater personal significance for me and an achievement that I’m extremely proud of.

“I’m committed to showcasing the provenance of ingredients and following The Three Chimneys’ sustainable ethos to source high-quality produce from local suppliers on the island and wider Scottish Highlands region," he adds.
